Description
This incredibly easy recipe transforms simple cherry tomatoes into a sweet, rich, and deeply flavorful spaghetti sauce with minimal effort. Perfect for a weeknight meal or a special occasion.
Ingredients
- 2 lbs (about 900g) cherry tomatoes, halved
- 6 large cloves garlic, roughly chopped
- 1/4 cup extra virgin olive oil
- 1 tsp fresh oregano, roughly chopped (or 1/2 tsp dried)
- 1/2 tsp red pepper flakes (optional, adjust to taste)
- 1 tsp salt, or to taste
- 1/2 tsp black pepper, freshly ground, or to taste
- 1/2 cup fresh basil leaves, chopped (for finishing)
Instructions
- Preheat oven to 400°F (200°C).
- Halve cherry tomatoes and spread them in a single layer on a large baking sheet.
- Add chopped garlic, olive oil, half of the fresh oregano, red pepper flakes (if using), salt, and pepper. Toss well to coat.
- Roast for 30-40 minutes, until tomatoes are soft, burst, and slightly caramelized.
- Transfer roasted tomatoes and all juices to a saucepan. Mash gently with a potato masher.
- Stir in remaining fresh oregano. Simmer over medium-low heat for 10-15 minutes, stirring occasionally.
- Remove from heat, stir in fresh basil. Taste and adjust seasoning as needed.
- Serve immediately over your favorite pasta.
