Easy Cherry Tomato Spaghetti Sauce

Description

This simple, incredibly flavorful cherry tomato spaghetti sauce is your new weeknight hero. Bursting with fresh taste, it’s ready in under 30 minutes and pairs perfectly with your favorite pasta.


Ingredients

  • 1.5 lbs (about 680g) cherry or grape tomatoes
  • 3 cloves garlic, peeled and lightly crushed
  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh basil leaves, roughly chopped or torn
  • Salt, to taste
  • Freshly cracked black pepper, to taste
  • Optional: Pinch of sugar, if needed
  • Optional: Reserved pasta water, for serving

Instructions

  • Heat a large skillet or wide pot over medium heat. Add the extra virgin olive oil.
  • Add the crushed garlic cloves and sauté for 1-2 minutes until fragrant and lightly golden. Be careful not to burn.
  • Add the whole cherry tomatoes to the skillet. Season generously with salt and black pepper. Stir to coat.
  • Cover the skillet and simmer for 10-15 minutes, stirring occasionally, until most tomatoes have burst and softened.
  • Remove the lid. Using the back of a spoon or a potato masher, gently mash any remaining whole tomatoes.
  • Taste the sauce and adjust seasoning. Add a tiny pinch of sugar if the sauce tastes too acidic.
  • Remove from heat and stir in the fresh basil.
  • Toss with cooked pasta, adding a splash of reserved pasta water for silkiness, if desired. Serve immediately.
