Description
An incredibly flavorful and easy spaghetti sauce made with roasted cherry tomatoes for intense sweetness. This recipe brings garden-fresh taste to your table with minimal effort.
Ingredients
- 2–3 lbs cherry or grape tomatoes
- 4–6 cloves garlic, peeled and smashed
- 3–4 tbsp extra virgin olive oil
- 1/2 tsp red pepper flakes (optional)
- Salt and black pepper to taste
- 1/4 cup fresh basil leaves, chopped
- 1/2 cup water or vegetable broth
- Optional: 1/2-1 tsp balsamic glaze or sugar
Instructions
- Preheat oven to 400°F (200°C). Place tomatoes and garlic on a baking sheet. Drizzle with olive oil, season with salt, pepper, and red pepper flakes. Toss to coat.
- Roast for 25-35 minutes, until tomatoes are blistered and burst.
- Transfer roasted tomatoes and juices to a saucepan. Add water/broth and simmer for 15-20 minutes.
- Mash with a potato masher or blend to desired consistency.
- Taste and adjust seasoning. Stir in fresh basil just before serving.
