Ingredients
- 2 lbs cherry or grape tomatoes, halved
- 4–5 cloves garlic, minced
- 3 tbsp extra virgin olive oil, plus more for garnish
- 1/2 cup fresh basil, chopped (plus more for garnish)
- 1 tsp fresh oregano, chopped (or 1/2 tsp dried)
- 1/2 tsp red pepper flakes (or to taste)
- Salt and freshly ground black pepper to taste
- Optional: 1 tbsp balsamic or red wine vinegar
- Optional: 1/4 cup vegetable broth or water
- Optional: 1 Parmesan rind
- 1 lb spaghetti or your favorite pasta
Instructions
- 1. Prep Tomatoes & Garlic: Halve cherry tomatoes and mince garlic. Preheat oven to 400°F (200°C) if roasting.
- Roast: Toss tomatoes with 2 tbsp olive oil, salt, pepper, and red pepper flakes on a baking sheet. Roast 20-25 mins until blistered.
- Sauté: Heat 3 tbsp olive oil in a large skillet. Add tomatoes, salt, pepper, and red pepper flakes. Sauté 10-15 mins until softened and burst.
- 3. Build Sauce: Transfer cooked tomatoes to a large saucepan (or continue in the skillet). Add minced garlic and oregano; cook 1-2 mins until fragrant. Add broth/water and Parmesan rind (if using).
- 4. Simmer & Finish: Bring to a simmer. Cook 15-20 mins, stirring occasionally, until flavors meld and sauce thickens. Taste and adjust seasoning. Stir in fresh basil just before serving.
- 5. Cook Pasta: Cook spaghetti according to package directions. Drain, reserving some pasta water.
- 6. Combine & Serve: Toss cooked pasta with the sauce, adding a splash of pasta water if needed for consistency. Serve immediately, garnished with extra fresh basil and a drizzle of olive oil.
