Ingredients
- 1 tbsp extra virgin olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1/2 tsp red pepper flakes (optional)
- 2 pints (about 4 cups) cherry or grape tomatoes, halved if large
- 1/2 tsp fine sea salt, plus more to taste
- 1/4 tsp freshly ground black pepper, plus more to taste
- 1/4 cup fresh basil leaves, roughly chopped
- Pasta of your choice, for serving
Instructions
- Heat olive oil in a large skillet or wide pot over medium heat. Add chopped onion and cook until softened and translucent, about 5-7 minutes.
- Add minced garlic and red pepper flakes (if using), and cook for another 30-60 seconds until fragrant, being careful not to burn.
- Increase heat to medium-high. Add cherry tomatoes, salt, and pepper. Cook, stirring occasionally, for 8-10 minutes or until most tomatoes have burst. Gently press on some with the back of a spoon to help them break down.
- Reduce heat to low, cover partially, and simmer for 10-15 minutes, stirring occasionally, until the sauce has thickened slightly and flavors have melded.
- Remove from heat and stir in fresh basil. Taste and adjust seasoning as needed.
- Serve immediately over your favorite cooked pasta.
