Ingredients
- 2 lbs (about 4 cups) cherry or grape tomatoes
- 6–8 cloves garlic, peeled whole
- 1/4 cup extra virgin olive oil, plus more for drizzling
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes (optional)
- 1/2 tsp salt, or to taste
- 1/4 tsp black pepper, or to taste
- 1/2 cup fresh basil leaves, roughly chopped, plus more for garnish
- 1 lb spaghetti or your favorite pasta
- 1–2 cups reserved pasta water
- Freshly grated Parmesan or Pecorino cheese, for serving
Instructions
- 1. Prep Tomatoes and Aromatics: Preheat oven to 400°F (200°C). Spread tomatoes and garlic on a large baking sheet. Drizzle with olive oil, sprinkle with oregano, red pepper flakes (if using), salt, and pepper. Toss to coat.
- 2. Roast for Deep Flavor: Roast for 25-35 minutes, until tomatoes burst, soften, and caramelize. Garlic should be soft.
- 3. Blend (or Mash) the Sauce: Transfer roasted tomatoes and garlic to a saucepan. Use an immersion blender for a smooth sauce or a potato masher for a chunky texture.
- 4. Simmer and Adjust Seasoning: Add chopped fresh basil to the saucepan. Simmer over medium-low heat for 5-10 minutes, allowing flavors to meld. Taste and adjust seasoning as needed.
- 5. Toss with Cooked Pasta: Cook spaghetti according to package directions, reserving 1-2 cups of pasta water before draining. Add drained pasta to the sauce. Toss vigorously, adding reserved pasta water a little at a time until the sauce beautifully coats the pasta. Serve immediately with grated cheese and extra basil.
