Ingredients
- 1 tbsp extra virgin olive oil
- 4 cloves garlic, minced
- 2 lbs cherry tomatoes
- 1/2 tsp kosher salt, plus more to taste
- 1/4 tsp freshly ground black pepper, plus more to taste
- 1/2 cup fresh basil leaves, roughly torn or chopped
- Optional: 1/4 tsp red pepper flakes
- Optional: Balsamic glaze for drizzling
Instructions
- Heat olive oil in a large skillet over medium heat. Add minced garlic (and red pepper flakes, if using) and sauté for 1 minute until fragrant.
- Add cherry tomatoes, salt, and pepper to the pan. Increase heat to medium-high, stir to coat, then cover and reduce heat to medium-low. Simmer for 10-15 minutes.
- Uncover and gently mash some of the burst tomatoes with the back of a spoon. Continue to simmer uncovered for 5-10 minutes, stirring occasionally, until the sauce thickens.
- Remove from heat and stir in the fresh basil. Taste and adjust seasoning as needed. Serve immediately with your favorite pasta.
