Description

This incredibly vibrant and easy cherry tomato spaghetti sauce uses roasted tomatoes for deep flavor. It’s a fresh, smooth, and utterly delicious way to elevate your pasta night.


Ingredients

  • 2 lbs cherry tomatoes
  • 68 cloves garlic, peeled
  • 1/4 cup extra virgin olive oil, plus more for garnish
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 teaspoon sea salt, plus more to taste
  • 1/2 teaspoon black pepper, plus more to taste
  • 1/2 cup fresh basil leaves, roughly chopped
  • 2 tablespoons fresh oregano leaves, roughly chopped
  • 1 lb spaghetti or your favorite pasta
  • Parmesan cheese, for serving

Instructions

  • Preheat Oven & Prep: Preheat oven to 400°F (200°C). On a large baking sheet, combine cherry tomatoes and peeled garlic cloves. Drizzle with olive oil, season with red pepper flakes (if using), salt, and pepper. Toss to coat evenly.
  • Roast Tomatoes & Garlic: Roast for 25-30 minutes, or until tomatoes are blistered and softened, and garlic is tender and fragrant.
  • Blend Sauce: Carefully transfer roasted tomatoes and garlic (and any juices!) to a high-speed blender or food processor. Blend until completely smooth. Add a splash of water if too thick.
  • Simmer for Flavor: Pour blended sauce into a saucepan. Bring to a gentle simmer over medium-low heat for 10-15 minutes, stirring occasionally, allowing flavors to meld.
  • Finish with Herbs: Remove from heat and stir in fresh basil and oregano. Taste and adjust seasoning as needed.
  • Serve: Toss with cooked pasta, garnish with extra fresh basil, a drizzle of olive oil, and Parmesan cheese. Enjoy immediately!
