Description
Indulge in this incredibly flavorful and easy-to-make roasted cherry tomato spaghetti sauce. Naturally sweet and bursting with fresh flavors, it’s perfect for any pasta dish.
Ingredients
- 2 lbs (about 4–5 cups) cherry or grape tomatoes
- 6–8 cloves garlic, peeled
- 1/4 cup extra virgin olive oil, plus more for drizzling
- 1 tsp sea salt, or to taste
- 1/2 tsp black pepper, freshly ground, or to taste
- 1/4–1/2 tsp red pepper flakes (optional, for a kick)
- 1/2 cup fresh basil leaves, torn or chopped
- Optional: 1/4 cup reserved pasta water, for thinning
Instructions
- Step 1: Preheat & Prep Tomatoes: Preheat oven to 400°F (200°C). On a large baking sheet, spread cherry tomatoes and peeled garlic cloves. Drizzle with olive oil, salt, and pepper. Toss to coat.
- Step 2: Roast Tomatoes & Garlic: Roast for 25-35 minutes, or until tomatoes are blistered, burst, and slightly caramelized. Garlic should be tender.
- Step 3: Transfer & Mash: Carefully transfer roasted tomatoes and garlic, with all pan juices, to a large skillet or pot. Mash gently with a spoon for a chunky sauce, or blend for a smoother consistency.
- Step 4: Simmer Sauce: Bring to a gentle simmer over medium-low heat. Cook for 5-10 minutes, allowing flavors to meld. Add red pepper flakes now if desired. If too thick, add a splash of pasta water.
- Step 5: Finish with Basil & Serve: Remove from heat and stir in fresh basil. Taste and adjust seasoning. Serve immediately with your favorite pasta.
