Ingredients
- 2 pounds cherry tomatoes, halved
- 6–8 cloves garlic, minced or thinly sliced
- 1/2 cup fresh basil, roughly chopped
- 1/4 cup + 2 tbsp extra virgin olive oil
- Salt to taste
- Black pepper to taste
- 1/2 tsp red pepper flakes (optional)
- 1 tsp balsamic glaze (optional)
- 1 pound spaghetti or your preferred pasta
Instructions
- Prepare Tomatoes: Preheat oven to 400°F (200°C). Halve cherry tomatoes and spread on a baking sheet. Drizzle with 1/4 cup olive oil, salt, pepper, and optional red pepper flakes. Roast for 20-25 minutes until blistered and burst.
- Sauté Aromatics: While tomatoes roast, heat remaining 2 tbsp olive oil in a large skillet over medium-low heat. Add minced garlic and sauté for 2-3 minutes until fragrant, being careful not to burn.
- Simmer Sauce: Add roasted tomatoes to the skillet with garlic. Gently crush about half of the tomatoes with a spoon or masher. Bring to a gentle simmer and cook for 10-15 minutes, allowing flavors to meld.
- Finish & Serve: Remove from heat. Stir in fresh chopped basil and optional balsamic glaze. Taste and adjust seasoning. Cook spaghetti according to package directions, reserving 1/2 cup pasta water. Drain pasta and add directly to sauce, tossing to coat. Add reserved pasta water as needed to achieve desired consistency. Serve immediately with Parmesan if desired.
