This incredibly easy yet deeply flavorful cherry tomato spaghetti sauce recipe leverages the power of roasting to create a wonderfully sweet and savory sauce. Perfect for a weeknight meal, it’s versatile, satisfying, and bursting with fresh flavors.
Ingredients
- 2 lbs cherry or grape tomatoes
- 6–8 cloves garlic, peeled
- 1 small yellow onion, roughly chopped
- 1/4 cup extra virgin olive oil
- 1 tsp salt, or to taste
- 1/2 tsp black pepper, or to taste
- 1/2 cup fresh basil leaves, roughly chopped or torn (divided)
- 2 tbsp fresh oregano leaves, roughly chopped (divided)
- Optional: Pinch of red pepper flakes
- Optional: 1 tsp red wine vinegar or a pinch of sugar, to taste
- Serve with: Cooked spaghetti, fresh Parmesan cheese
Instructions
- Preheat oven to 400°F (200°C).
- On a large baking sheet, combine cherry tomatoes, garlic cloves, and chopped onion. Drizzle with olive oil, season with salt and pepper, and toss to coat. Spread in a single layer.
- Roast for 25-35 minutes, or until tomatoes are bursting, softened, and slightly caramelized.
- Transfer roasted vegetables to a blender or food processor. Add half of the fresh basil and oregano. Pulse for a chunky sauce, or blend until smooth for a creamy texture.
- Pour sauce into a saucepan. Add remaining fresh basil and oregano. Bring to a gentle simmer over medium-low heat for 10-15 minutes, allowing flavors to meld.
- Taste and adjust seasoning with additional salt, pepper, red wine vinegar, or a pinch of sugar if needed.
- Serve hot over cooked spaghetti, garnished with fresh Parmesan and extra basil.
