Ingredients

  • 2 lbs cherry or grape tomatoes
  • 68 cloves garlic, peeled
  • 1 small yellow onion, roughly chopped
  • 1/4 cup extra virgin olive oil
  • 1 tsp salt, or to taste
  • 1/2 tsp black pepper, or to taste
  • 1/2 cup fresh basil leaves, roughly chopped or torn (divided)
  • 2 tbsp fresh oregano leaves, roughly chopped (divided)
  • Optional: Pinch of red pepper flakes
  • Optional: 1 tsp red wine vinegar or a pinch of sugar, to taste
  • Serve with: Cooked spaghetti, fresh Parmesan cheese

Instructions

  • Preheat oven to 400°F (200°C).
  • On a large baking sheet, combine cherry tomatoes, garlic cloves, and chopped onion. Drizzle with olive oil, season with salt and pepper, and toss to coat. Spread in a single layer.
  • Roast for 25-35 minutes, or until tomatoes are bursting, softened, and slightly caramelized.
  • Transfer roasted vegetables to a blender or food processor. Add half of the fresh basil and oregano. Pulse for a chunky sauce, or blend until smooth for a creamy texture.
  • Pour sauce into a saucepan. Add remaining fresh basil and oregano. Bring to a gentle simmer over medium-low heat for 10-15 minutes, allowing flavors to meld.
  • Taste and adjust seasoning with additional salt, pepper, red wine vinegar, or a pinch of sugar if needed.
  • Serve hot over cooked spaghetti, garnished with fresh Parmesan and extra basil.
