Transform sweet cherry tomatoes into a vibrant, fresh spaghetti sauce in under 30 minutes. Perfect for a delicious weeknight meal that tastes like summer.
Ingredients
- 1.5 lbs (about 4 cups) cherry tomatoes, halved or gently crushed
- 3 tbsp extra virgin olive oil
- 4–5 cloves garlic, minced
- 1/2 tsp red pepper flakes (optional)
- 1/4 cup fresh basil leaves, torn or roughly chopped
- 1 tbsp fresh oregano, chopped (or 1 tsp dried)
- Salt to taste
- Freshly cracked black pepper to taste
- Optional: 1 tbsp balsamic glaze, for finishing
Instructions
- 1. Prep Tomatoes: Wash and either halve or gently crush the cherry tomatoes.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using); sauté for 1-2 minutes until fragrant and light golden.
- 3. Simmer Sauce: Add prepped tomatoes to the skillet. Bring to a gentle bubble, then reduce heat to low, cover partially, and simmer for 15-20 minutes, stirring occasionally and gently pressing tomatoes to help them burst.
- 4. Add Herbs: Uncover, stir in fresh basil and oregano. Cook for another 2-3 minutes.
- 5. Season & Serve: Season generously with salt and pepper. Adjust consistency if needed. Drizzle with balsamic glaze if desired. Serve immediately over your favorite pasta.
