Ingredients

  • 1.5 lbs (about 4 cups) cherry tomatoes, halved or gently crushed
  • 3 tbsp extra virgin olive oil
  • 45 cloves garlic, minced
  • 1/2 tsp red pepper flakes (optional)
  • 1/4 cup fresh basil leaves, torn or roughly chopped
  • 1 tbsp fresh oregano, chopped (or 1 tsp dried)
  • Salt to taste
  • Freshly cracked black pepper to taste
  • Optional: 1 tbsp balsamic glaze, for finishing

Instructions

  • 1. Prep Tomatoes: Wash and either halve or gently crush the cherry tomatoes.
  • 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using); sauté for 1-2 minutes until fragrant and light golden.
  • 3. Simmer Sauce: Add prepped tomatoes to the skillet. Bring to a gentle bubble, then reduce heat to low, cover partially, and simmer for 15-20 minutes, stirring occasionally and gently pressing tomatoes to help them burst.
  • 4. Add Herbs: Uncover, stir in fresh basil and oregano. Cook for another 2-3 minutes.
