Ingredients
- 1.5 lbs (approx. 4-5 cups) cherry tomatoes
- 4–5 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 cup fresh basil leaves, chopped or torn
- Salt and freshly ground black pepper to taste
- 1/2 cup reserved pasta water (approx.)
- Optional: Pinch of red pepper flakes
- Optional: 1 small Parmesan rind
- 1 lb spaghetti or your favorite pasta
Instructions
- 1. Prep Ingredients: Rinse cherry tomatoes. Mince garlic. Cook pasta according to package directions, reserving at least 1 cup of pasta water before draining.
- 2. Sauté Aromatics: In a large skillet or pot, heat olive oil over medium-low heat. Add minced garlic (and red pepper flakes, if using) and sauté for 1-2 minutes until fragrant.
- 3. Cook Tomatoes: Add cherry tomatoes to the pan. Season generously with salt and pepper. Cover and cook over medium heat for 5-7 minutes, shaking occasionally, until most tomatoes have burst.
- 4. Simmer Sauce: Uncover the pan. Use the back of a spoon to gently smash some (not all) of the tomatoes. Add Parmesan rind, if using. Simmer for 10-15 minutes, uncovered, allowing flavors to meld and sauce to thicken slightly.
- 5. Finish and Serve: Remove Parmesan rind. Turn off heat and stir in fresh basil. Add reserved pasta water as needed to reach desired sauce consistency. Taste and adjust seasoning. Toss immediately with cooked spaghetti and serve hot.
