Ingredients

  • 1.5 lbs cherry tomatoes, left whole
  • 4 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1/2 cup fresh basil, roughly chopped, divided
  • 1/2 tsp salt, or to taste
  • 1/4 tsp black pepper, or to taste
  • 1/4 tsp red pepper flakes (optional, for heat)
  • 12 oz spaghetti (or pasta of choice)
  • Reserved pasta water (optional)

Instructions

  • 1. Prep Ingredients: Wash tomatoes, mince garlic, roughly chop basil. Have all ingredients ready.
  • 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using); sauté for 1 minute until fragrant.
  • 3. Cook Tomatoes: Add whole cherry tomatoes to the skillet. Increase heat to medium-high and cook, stirring occasionally, for 8-10 minutes until tomatoes soften, wrinkle, and burst. Gently press some with a spoon.
  • 4. Simmer: Reduce heat to low and simmer for 5-10 minutes to meld flavors. Taste and adjust seasoning with salt, pepper, and a tiny pinch of sugar if needed.
  • 5. Finish & Serve: Remove from heat. Stir in two-thirds of the fresh basil. Cook pasta according to package directions, reserving 1/2 cup of pasta water. Add drained pasta directly to the sauce; toss vigorously, adding a splash of pasta water if needed for glossiness. Garnish with remaining basil and a drizzle of olive oil. Serve immediately.
