Description
A vibrant and flavorful spaghetti sauce made with sweet roasted cherry tomatoes and garlic. It’s incredibly easy to prepare and perfect for a quick weeknight dinner.
Ingredients
- 2 lbs cherry or grape tomatoes
- 6–8 cloves garlic, peeled
- 3–4 tbsp extra virgin olive oil, divided
- 1 tsp salt, plus more to taste
- 1/2 tsp black pepper, plus more to taste
- 1/2 cup water or vegetable broth
- 1/4 cup fresh basil, chopped
- 1 tsp fresh oregano (or 1/3 tsp dried)
- Optional: 1 small onion, diced
- Optional: Pinch red pepper flakes
- Optional: 1/4 – 1/2 tsp granulated sugar
Instructions
- Preheat oven to 400°F (200°C). On a large baking sheet, spread cherry tomatoes and garlic. Drizzle with 3-4 tbsp olive oil, salt, and pepper. Toss to coat.
- Roast for 25-35 minutes, until tomatoes are blistered and softened.
- (Optional Step): While tomatoes roast, heat 1 tbsp olive oil in a saucepan over medium heat. Sauté diced onion and red pepper flakes (if using) for 3-5 minutes until softened.
- Transfer roasted tomatoes, garlic, and pan juices to the saucepan. Add water or broth. Bring to a simmer, then cover and cook on low for 10-15 minutes.
- Remove from heat. Use an immersion blender (or standard blender) to blend to your desired consistency (smooth or chunky).
- Stir in fresh basil and oregano. Taste and adjust seasoning with more salt, pepper, or a pinch of sugar if needed. Serve warm.
