Ingredients
- 1.5 lbs (about 680g) cherry or grape tomatoes
- 4 cloves garlic, thinly sliced or minced
- 1/4 cup extra virgin olive oil, plus more for drizzling
- 1/2 teaspoon red pepper flakes (optional, adjust to taste)
- 1/2 cup fresh basil leaves, torn or roughly chopped
- Salt and freshly cracked black pepper to taste
- (Optional) Freshly grated Parmesan or Pecorino Romano cheese, for serving
Instructions
- 1. Prepare Ingredients: Wash cherry tomatoes. Slice or mince garlic.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes; sauté 1-2 minutes until fragrant, being careful not to burn.
- 3. Simmer Tomatoes: Add cherry tomatoes to the skillet. Season with salt and pepper. Cover and simmer for 10-15 minutes, stirring occasionally, until tomatoes burst. Gently crush any un-burst tomatoes with the back of a spoon.
- 4. Finish Sauce: Remove from heat. Stir in fresh basil. Taste and adjust seasoning.
- 5. Serve: Toss with your favorite cooked pasta and garnish with fresh Parmesan, if desired.
