Ingredients
- 1.5 lbs (approx. 4 cups) cherry or grape tomatoes
- 2 tbsp extra virgin olive oil
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1/2 tsp red pepper flakes (optional, adjust to taste)
- 1 tbsp balsamic vinegar
- 1/4 cup fresh basil, chopped + extra for garnish
- Salt and freshly ground black pepper to taste
- Optional: 1/4 cup dry red wine or vegetable broth
Instructions
- Heat olive oil in a large skillet or pot over medium heat. Add diced onion and cook until softened, 5-7 minutes.
- Add minced garlic and red pepper flakes; cook for 1-2 minutes until fragrant.
- Stir in cherry tomatoes and balsamic vinegar. Bring to a simmer, then cover and cook on low for 15-20 minutes, stirring occasionally, until tomatoes burst.
- Uncover, gently mash tomatoes with a spoon. Simmer 5-10 minutes more to thicken. Add wine/broth if using and reduce.
- Remove from heat, stir in fresh basil, salt, and pepper. Serve warm over spaghetti with desired garnishes.
