Description
An incredibly fresh and vibrant cherry tomato spaghetti sauce that comes together quickly. Perfect for a flavorful weeknight meal that everyone will adore.
Ingredients
- 1 lb spaghetti or other pasta
- 2 lbs fresh cherry or grape tomatoes, halved
- 1/4 cup extra virgin olive oil
- 6–8 cloves garlic, thinly sliced or minced
- 1/2 cup fresh basil leaves, roughly torn or chopped
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- Pinch of red pepper flakes (optional)
- Reserved pasta water
Instructions
- Cook pasta according to package directions in well-salted water. Reserve 1 cup pasta water before draining.
- While pasta cooks, heat olive oil in a large skillet over medium-low heat. Add garlic and cook for 1-2 minutes until fragrant, being careful not to burn.
- Increase heat to medium, add halved cherry tomatoes. Cook, stirring occasionally and gently pressing some, for 8-12 minutes until most have burst.
- Reduce heat to low and simmer for 5-10 minutes, allowing flavors to meld.
- Remove from heat, stir in fresh basil, salt, pepper, and red pepper flakes (if using). Taste and adjust seasoning.
- Add drained pasta to the sauce. Add 1/4 to 1/2 cup reserved pasta water, tossing to coat and emulsify. Add more pasta water if needed to reach desired consistency. Serve immediately.
