Description
This vibrant and incredibly flavorful sauce highlights the natural sweetness of roasted cherry tomatoes and garlic. It’s surprisingly simple to make, perfect for a weeknight meal or entertaining.
Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes
- 6–8 cloves garlic, peeled, left whole
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon red pepper flakes (or to taste)
- 1 teaspoon sea salt (or to taste)
- 1/2 teaspoon black pepper, freshly ground
- 1/2 cup fresh basil leaves, chopped
- Optional: Balsamic glaze, grated Parmesan for serving
Instructions
- Preheat oven to 400°F (200°C).
- On a large rimmed baking sheet, combine cherry tomatoes and whole garlic cloves.
- Drizzle with olive oil, red pepper flakes, salt, and pepper. Toss to coat evenly.
- Roast for 25-35 minutes, or until tomatoes are burst and slightly caramelized.
- Let cool slightly, then transfer to a food processor or blender. Pulse or blend to desired consistency.
- Pour sauce into a saucepan. Stir in fresh basil. Simmer over medium-low heat for 5-10 minutes.
- Taste and adjust seasoning as needed. Serve over your favorite pasta.
