Description
This simple yet incredibly flavorful cherry tomato spaghetti sauce bursts with the natural sweetness of ripe cherry tomatoes, fresh basil, and aromatic garlic. It’s the perfect quick and delightful sauce for any pasta night.
Ingredients
- 1 tbsp extra virgin olive oil
- 4 cloves garlic, minced
- 1/2 tsp red pepper flakes (optional, adjust to taste)
- 2 pints (approx. 4 cups) cherry or grape tomatoes, halved
- 1/4 cup fresh basil leaves, roughly chopped
- Salt and freshly ground black pepper, to taste
- Optional: 1 tsp sugar (to balance acidity)
- Optional: 1/4 cup dry white wine or vegetable broth
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium heat.
- Add minced garlic and red pepper flakes (if using); sauté for 1-2 minutes until fragrant, being careful not to burn.
- Add halved cherry tomatoes to the pan. Increase heat to medium-high. Cook, stirring occasionally, until tomatoes soften and burst, about 8-10 minutes. If using, deglaze with wine or broth.
- Gently mash some of the tomatoes with a potato masher or fork for a rustic texture. Simmer for another 5-7 minutes to allow flavors to meld and sauce to slightly reduce.
- Remove from heat. Stir in fresh basil. Season generously with salt and pepper, adding sugar if needed to balance acidity.
- Serve immediately over your favorite pasta or use as desired.
