Craft this delightful cherry tomato spaghetti sauce bursting with fresh, vibrant flavors in under 30 minutes. It’s a perfect weeknight meal that tastes like it simmered all day.
Ingredients
- 1.5 lbs (approx. 4 cups) cherry tomatoes, whole or lightly pricked
- 1/4 cup extra virgin olive oil
- 4–5 cloves garlic, minced
- 1/2 – 1 tsp red pepper flakes (optional, adjust to taste)
- 1/4 cup fresh basil, chopped
- 2 tbsp fresh oregano, chopped (or 2 tsp dried)
- 1 tsp sea salt, or to taste
- 1/2 tsp black pepper, or to taste
- Optional: 1-2 tsp balsamic glaze, for serving
Instructions
- Heat olive oil in a large skillet over medium-low heat.
- Add minced garlic and red pepper flakes; sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
- Add cherry tomatoes, salt, and pepper to the skillet. Cover and cook for 8-10 minutes, stirring occasionally until most tomatoes burst.
- Uncover the skillet and gently mash some of the tomatoes with a spoon or potato masher for texture.
- Simmer uncovered for another 5-7 minutes, allowing the sauce to thicken slightly.
- Remove from heat, stir in fresh basil and oregano. Taste and adjust seasoning as needed.
- Serve immediately over your favorite pasta, optionally drizzled with balsamic glaze.
