Ingredients

  • 1.5 lbs (approx. 4 cups) cherry tomatoes, whole or lightly pricked
  • 1/4 cup extra virgin olive oil
  • 45 cloves garlic, minced
  • 1/21 tsp red pepper flakes (optional, adjust to taste)
  • 1/4 cup fresh basil, chopped
  • 2 tbsp fresh oregano, chopped (or 2 tsp dried)
  • 1 tsp sea salt, or to taste
  • 1/2 tsp black pepper, or to taste
  • Optional: 1-2 tsp balsamic glaze, for serving

Instructions

  • Heat olive oil in a large skillet over medium-low heat.
  • Add minced garlic and red pepper flakes; sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
  • Add cherry tomatoes, salt, and pepper to the skillet. Cover and cook for 8-10 minutes, stirring occasionally until most tomatoes burst.
  • Uncover the skillet and gently mash some of the tomatoes with a spoon or potato masher for texture.
  • Simmer uncovered for another 5-7 minutes, allowing the sauce to thicken slightly.
  • Remove from heat, stir in fresh basil and oregano. Taste and adjust seasoning as needed.
  • Serve immediately over your favorite pasta, optionally drizzled with balsamic glaze.
