Ingredients
- 2 tablespoons olive oil
- 1 small yellow onion, finely diced
- 4–5 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional, adjust to taste)
- 2 pints (about 4 cups) cherry or grape tomatoes
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon freshly ground black pepper, or to taste
- 1/2 cup fresh basil leaves, roughly chopped or torn
- 1 pound spaghetti or your preferred pasta
Instructions
- 1. Prep Ingredients: Wash tomatoes. Dice onion and mince garlic. Prepare basil.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium. Add onion and cook until translucent (5-7 mins). Add garlic and red pepper flakes; cook until fragrant (1-2 mins).
- 3. Cook Tomatoes: Add cherry tomatoes, salt, and pepper to the skillet. Cover and cook for 10-15 minutes, stirring occasionally, until tomatoes soften and burst.
- 4. Simmer Sauce: Uncover skillet. Gently press any unburst tomatoes. Simmer for 5-10 minutes, uncovered, to reduce and thicken the sauce slightly. Taste and adjust seasoning.
- 5. Finish & Serve: Remove from heat and stir in fresh basil. Serve immediately over cooked spaghetti, garnishing with extra basil if desired.
