  • Total Time: 1 hour
  • Yield: 4-6 servings

Description

Craft the most flavor-packed, easy-to-make homemade spaghetti sauce using sweet cherry tomatoes. This recipe transforms simple ingredients into a gourmet meal.

Ingredients

  • 2 pints (about 4 cups) cherry tomatoes
  • 1/4 cup extra virgin olive oil, divided
  • 1/2 medium yellow onion, finely diced
  • 45 cloves garlic, minced
  • 1/21 teaspoon red pepper flakes (optional, to taste)
  • 1/2 cup fresh basil, chopped (plus more for garnish)
  • 1 tablespoon fresh oregano, chopped (or 1/2 tsp dried)
  • 1 teaspoon sea salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)

Instructions

  • 1. Prepare Tomatoes: Preheat oven to 400°F (200°C). Place cherry tomatoes on a baking sheet, drizzle with 2 tablespoons olive oil, and season with salt and pepper.
  • 2. Roast Tomatoes: Roast for 20-30 minutes, or until tomatoes are blistered, soft, and slightly caramelized.
  • 3. Sauté Aromatics: While tomatoes roast, heat remaining 2 tablespoons olive oil in a large saucepan over medium heat. Add diced onion and cook until translucent (5-7 mins). Add minced garlic and red pepper flakes; cook for 1-2 minutes until fragrant.
  • 4. Combine & Simmer: Add roasted tomatoes (including juices) to the saucepan. Gently crush about two-thirds of the tomatoes with a potato masher. Stir in fresh herbs (basil and oregano). Bring to a gentle simmer and cook for 15-20 minutes, allowing flavors to meld.
  • 5. Finish & Serve: Taste and adjust seasoning as needed. Serve hot over your favorite pasta, garnished with fresh basil and Parmesan cheese.
