Ingredients

  • 1 tbsp Extra Virgin Olive Oil
  • 1 small Onion, diced
  • 34 cloves Garlic, minced
  • 1/2 tsp Red Pepper Flakes (optional, for heat)
  • 2 lbs Cherry or Grape Tomatoes, halved
  • 1/2 tsp Salt, or to taste
  • 1/4 tsp Black Pepper, or to taste
  • 1/4 cup Fresh Basil, roughly chopped
  • 1 tbsp Fresh Oregano, chopped (optional)
  • Pinch of Sugar (optional, to balance acidity)
  • Cooked Spaghetti or pasta of choice, for serving
  • Freshly grated Parmesan cheese, for serving

Instructions

  • Heat olive oil in a large skillet or Dutch oven over medium heat. Add diced onion and cook until softened, 3-5 minutes.
  • Stir in minced garlic and red pepper flakes (if using) and cook for 1 minute until fragrant.
  • Add halved cherry tomatoes, salt, and pepper. Increase heat to medium-high and cook, stirring occasionally, for 8-10 minutes until tomatoes burst and release juices. Gently press some tomatoes with a spoon to create a saucier consistency.
  • Reduce heat to low, stir in fresh oregano (if using), and simmer for 5-7 minutes to allow flavors to meld.
  • Remove from heat, stir in fresh basil. Taste and adjust seasonings (add a pinch of sugar if needed).
  • Toss with cooked spaghetti or your favorite pasta. Serve immediately with freshly grated Parmesan cheese.
