Ingredients
- 1.5 lbs (about 4–5 cups) ripe cherry or grape tomatoes
- 3–4 cloves garlic, minced or thinly sliced
- 1/4 cup extra virgin olive oil
- 1/2 tsp salt, plus more to taste
- 1/4 tsp black pepper, plus more to taste
- 1/2 cup fresh basil leaves, torn or roughly chopped
- Optional: Pinch of red pepper flakes, 1/2 tsp sugar, splash of balsamic vinegar
Instructions
- 1. Prepare Ingredients: Wash tomatoes. Mince garlic. Have basil ready.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add garlic (and red pepper flakes if using) and cook for 1-2 minutes until fragrant, without browning.
- 3. Add Tomatoes & Season: Add whole cherry tomatoes to the pan. Season with salt and pepper. Stir to coat.
- 4. Simmer: Reduce heat to low, cover, and simmer for 15-20 minutes, stirring occasionally, until tomatoes burst and soften.
- 5. Mash & Thicken: Uncover. Use a wooden spoon or potato masher to gently mash tomatoes against the pan. Simmer for another 5-10 minutes to thicken.
- 6. Finish: Remove from heat. Stir in fresh basil. Taste and adjust seasoning with more salt, pepper, or a pinch of sugar/balsamic vinegar if needed. Serve immediately with your favorite pasta.
