Ingredients

  • 1.5 lbs (about 6 cups) cherry or grape tomatoes
  • 45 cloves garlic, thinly sliced or minced
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon red pepper flakes (optional, adjust to taste)
  • 1/2 cup fresh basil leaves, roughly chopped
  • Salt and freshly ground black pepper to taste
  • 12 oz spaghetti or your favorite pasta
  • Freshly grated Parmesan cheese, for serving

Instructions

  • 1. Prepare Ingredients: Rinse tomatoes. Slice garlic.
  • 2. Sauté Aromatics: Heat olive oil in a large skillet over medium-low heat. Add garlic and red pepper flakes; sauté for 1-2 minutes until fragrant, without burning.
  • 3. Blister Tomatoes: Add cherry tomatoes to the skillet. Increase heat to medium-high. Cook, stirring occasionally, for 8-12 minutes until tomatoes soften, burst, and release juices. Gently crush some tomatoes with a spoon.
  • 4. Simmer & Season: Reduce heat to low. Season generously with salt and pepper. Simmer for 5 minutes. Taste and adjust seasoning.
  • 5. Finish with Basil: Remove from heat. Stir in fresh basil. Toss immediately with cooked spaghetti and serve with Parmesan.
