Ingredients
- 1 lb spaghetti (or pasta of choice)
- 2 pints (about 4 cups) cherry or grape tomatoes
- 3–4 cloves garlic, minced
- 1/4 cup extra virgin olive oil, plus more for finishing
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup fresh basil leaves, torn or chopped
- Salt and freshly ground black pepper to taste
- Reserved pasta water
- Parmesan cheese (optional, for serving)
Instructions
- In a large skillet, heat 1/4 cup olive oil over medium heat. Add minced garlic and red pepper flakes (if using); sauté for 1-2 minutes until fragrant.
- Add cherry tomatoes, season with salt and pepper, and stir. Cover and simmer on low for 10-15 minutes until most tomatoes burst.
- Remove lid, use a wooden spoon to press remaining whole tomatoes to release juices. Simmer uncovered for 5-7 minutes to reduce slightly.
- Cook spaghetti in salted water until 1-2 minutes shy of al dente. Reserve 1 cup pasta water, then drain pasta.
- Add drained pasta and fresh basil to the skillet with sauce. Add 1/2 cup reserved pasta water and toss vigorously until sauce coats pasta. Add more pasta water if needed for desired consistency.
- Serve immediately, topped with more fresh basil and a drizzle of olive oil, and Parmesan cheese if desired.
