Description
Transform humble cherry tomatoes into an incredibly flavorful and silky spaghetti sauce with this simple roasting method. Perfect for weeknights, capturing garden-fresh taste with minimal effort.
Ingredients
- 2 lbs (about 4 cups) cherry or grape tomatoes
- 4–6 cloves garlic, unpeeled
- 3 tbsp extra virgin olive oil
- 1 tsp fresh oregano sprigs (or 1/2 tsp dried)
- 1/2 cup fresh basil leaves, divided (half for roasting, half for garnish)
- 1/2 tsp sea salt (or to taste)
- 1/4 tsp black pepper (or to taste)
- Optional: 1 tbsp balsamic glaze
- Optional: 1/4 tsp red pepper flakes
Instructions
- 1. Prepare Ingredients: Preheat oven to 400°F (200°C). Place cherry tomatoes, unpeeled garlic cloves, and half of the fresh herb sprigs on a large baking sheet.
- 2. Season and Toss: Drizzle with olive oil, salt, pepper, and optional balsamic glaze and red pepper flakes. Toss gently to coat all ingredients evenly.
- 3. Roast: Roast for 25-35 minutes, or until tomatoes are burst, softened, and lightly caramelized. Garlic should be tender.
- 4. Blend: Remove from oven. Squeeze roasted garlic from skins into an a blender with the roasted tomatoes and pan juices. Discard herb stems. Blend until desired consistency (smooth or chunky).
- 5. Simmer and Serve: Transfer sauce to a saucepan and simmer over low heat for 5-10 minutes. Stir in remaining fresh basil (if using). Taste and adjust seasoning. Serve hot over your favorite pasta.
