Ingredients
- 1 pint (about 2 cups) cherry tomatoes, whole or halved
- 3 cloves garlic, minced
- 3 tbsp extra virgin olive oil
- 1/2 tsp red pepper flakes (optional)
- 1 tbsp balsamic vinegar
- 1/2 cup fresh basil leaves, roughly torn
- Salt and freshly ground black pepper to taste
- 1 lb spaghetti or pasta of choice
Instructions
- 1. Prepare Ingredients: Wash tomatoes, mince garlic, and tear basil.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes (if using); sauté for 1-2 minutes until fragrant and golden.
- 3. Add Tomatoes & Deglaze: Add cherry tomatoes to the pan. Increase heat to medium-high and cook for 5-7 minutes until softened and some skins burst. Add balsamic vinegar and scrape any browned bits from the bottom.
- 4. Simmer & Burst: Gently crush remaining whole tomatoes with a spoon. Reduce heat to medium-low, cover, and simmer for 10-15 minutes, stirring occasionally, until thickened.
- 5. Season & Finish: Remove lid, taste, and season generously with salt and pepper. Stir in fresh basil just before serving. Toss with cooked pasta.
