Ingredients
- 2 lbs (approx. 4 cups) fresh cherry or grape tomatoes, halved
- 4–6 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon red pepper flakes (optional, for a kick)
- 1/4 cup fresh basil, chopped, plus more for garnish
- 1 tablespoon balsamic glaze or red wine vinegar
- Salt and freshly ground black pepper to taste
- 1 lb spaghetti or pasta of choice
- Reserved pasta water (optional)
Instructions
- 1. Prep Ingredients: Halve cherry tomatoes, mince garlic, chop basil.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium. Add garlic and red pepper flakes; sauté 1-2 minutes until fragrant.
- 3. Simmer Tomatoes: Add halved cherry tomatoes, salt, and pepper. Simmer covered for 15-20 minutes, stirring occasionally, until tomatoes soften and release juices.
- 4. Crush & Thicken: Uncover and gently crush about 2/3 of the tomatoes with a spoon. Simmer uncovered for another 5-10 minutes, allowing sauce to thicken.
