Description

This simple, seriously flavorful cherry tomato spaghetti sauce leverages roasting to create an intensely sweet and vibrant sauce. It’s perfect for weeknights and tastes incredibly garden-fresh.


Ingredients

  • 2 lbs cherry tomatoes
  • 6 cloves garlic, peeled
  • 1/4 cup extra virgin olive oil
  • 1/2 tsp sea salt (or to taste)
  • 1/4 tsp black pepper (or to taste)
  • 1/41/2 tsp red pepper flakes (optional)
  • 1/4 cup fresh basil leaves, roughly chopped
  • 1/4 cup water or vegetable broth

Instructions

  • Preheat & Prep: Preheat oven to 400°F (200°C). On a large rimmed baking sheet, combine cherry tomatoes, garlic, olive oil, salt, pepper, and red pepper flakes (if using). Toss to coat.
  • Roast: Roast for 25-30 minutes, until tomatoes are burst and caramelized.
  • Simmer: Transfer roasted tomatoes and juices to a saucepan. Add water/broth. Bring to a gentle simmer for 5-7 minutes.
  • Mash & Finish: Use a potato masher to mash tomatoes to desired consistency. Stir in fresh basil. Taste and adjust seasonings. Serve warm over pasta.
