Description
This simple, seriously flavorful cherry tomato spaghetti sauce leverages roasting to create an intensely sweet and vibrant sauce. It’s perfect for weeknights and tastes incredibly garden-fresh.
Ingredients
- 2 lbs cherry tomatoes
- 6 cloves garlic, peeled
- 1/4 cup extra virgin olive oil
- 1/2 tsp sea salt (or to taste)
- 1/4 tsp black pepper (or to taste)
- 1/4 – 1/2 tsp red pepper flakes (optional)
- 1/4 cup fresh basil leaves, roughly chopped
- 1/4 cup water or vegetable broth
Instructions
- Preheat & Prep: Preheat oven to 400°F (200°C). On a large rimmed baking sheet, combine cherry tomatoes, garlic, olive oil, salt, pepper, and red pepper flakes (if using). Toss to coat.
- Roast: Roast for 25-30 minutes, until tomatoes are burst and caramelized.
- Simmer: Transfer roasted tomatoes and juices to a saucepan. Add water/broth. Bring to a gentle simmer for 5-7 minutes.
- Mash & Finish: Use a potato masher to mash tomatoes to desired consistency. Stir in fresh basil. Taste and adjust seasonings. Serve warm over pasta.
