Craft this unbelievably delicious and vibrant cherry tomato spaghetti sauce with ease. Roasting the tomatoes brings out an unparalleled sweetness and depth of flavor you’ll adore.
Ingredients
- 2 lbs (approx. 4 cups) cherry or grape tomatoes, halved
- 4–5 cloves garlic, peeled and lightly smashed
- 1/2 cup extra virgin olive oil, divided
- 1 medium yellow onion, finely diced
- 1/4 cup balsamic vinegar OR dry red wine
- 1/2 cup fresh basil leaves, roughly chopped, plus more for garnish
- Salt and freshly ground black pepper to taste
- Your favorite spaghetti or pasta, for serving
- Freshly grated Parmesan cheese, for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C).
- On a large baking sheet, toss the halved cherry tomatoes and smashed garlic with 1/4 cup olive oil, salt, and pepper. Spread in a single layer and roast for 20-25 minutes, until blistered and softened.
- While tomatoes roast, heat the remaining 1/4 cup olive oil in a large skillet or Dutch oven over medium heat. Add diced onion and cook until translucent, about 5-7 minutes.
- Transfer roasted tomatoes and garlic (with all pan juices!) to the skillet with the onions. Add balsamic vinegar or red wine. Bring to a gentle simmer.
- Gently crush some of the tomatoes with the back of a spoon to your desired consistency. Simmer for 10-15 minutes, allowing flavors to meld.
- Remove from heat, stir in fresh basil. Taste and adjust seasoning with salt and pepper as needed.
- Toss with cooked spaghetti or serve over your preferred pasta. Garnish with fresh Parmesan and extra basil, if desired.
