Ingredients
- 2 pints (about 4 cups) fresh cherry or grape tomatoes, halved if large
- 1/4 cup extra virgin olive oil
- 1 small yellow or red onion, finely diced
- 4–5 cloves garlic, minced
- 1/4 cup dry red wine or balsamic vinegar (optional, for depth)
- 1/2 teaspoon dried oregano (or 1 tbsp fresh)
- Pinch of red pepper flakes (optional, for heat)
- 1/4 cup fresh basil leaves, roughly chopped
- Salt and freshly ground black pepper, to taste
- Pinch of sugar (optional, to balance acidity)
- Freshly grated Parmesan cheese, for serving
Instructions
- Prep Ingredients: Wash and halve cherry tomatoes. Mince garlic and dice onion. Chop fresh herbs.
- Sauté Aromatics: Heat olive oil in a large pan over medium heat. Add onion and cook until softened (5-7 mins). Add garlic, dried oregano, and red pepper flakes; cook for 1 minute until fragrant.
- Add Tomatoes & Simmer: Deglaze with red wine/balsamic. Add tomatoes, salt, and a pinch of sugar. Simmer uncovered for 15-20 minutes, or until tomatoes burst.
- Crush & Finish: Use a spoon or potato masher to gently crush tomatoes. Stir in fresh basil. Simmer for another 5-10 minutes to thicken.
- Adjust Seasoning: Taste and adjust salt, pepper, and acidity/sweetness as needed.
- Serve: Toss with hot pasta, garnish with Parmesan and fresh basil.
