A vibrant and quick cherry tomato spaghetti sauce bursting with fresh flavors. Perfect for a delicious weeknight meal that comes together in under 30 minutes.
Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes
- 4 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 cup fresh basil leaves, roughly chopped, plus more for garnish
- 1/4 teaspoon red pepper flakes (optional, adjust to taste)
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper, or to taste
- Parmesan cheese, freshly grated (for serving)
Instructions
- Wash and halve any larger cherry tomatoes. Mince garlic and chop basil.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes; sauté for 1-2 minutes until fragrant.
- Add cherry tomatoes, salt, and pepper to the skillet. Stir to coat.
- Bring to a gentle simmer, then cover and cook for 15-20 minutes, or until tomatoes are soft and burst.
- Remove lid. Gently mash tomatoes with a potato masher or fork. Simmer uncovered for 5-10 minutes to thicken. Adjust seasoning.
- Remove from heat, stir in fresh basil. Serve immediately over your favorite pasta, topped with Parmesan.
