Description
An incredibly flavorful and easy-to-make roasted cherry tomato spaghetti sauce, boasting sweet and savory notes. Perfect for a quick weeknight dinner or meal prep.
Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes
- 1 medium yellow or white onion, thinly sliced
- 4–5 cloves garlic, smashed or roughly chopped
- 1/4 cup extra virgin olive oil
- 1 tsp fresh oregano (or 1/3 tsp dried)
- 1 tbsp balsamic vinegar or red wine vinegar
- 1/4 cup fresh basil, chopped
- Salt and freshly ground black pepper to taste
Instructions
- Preheat Oven & Prep Tomatoes: Preheat oven to 400°F (200°C). On a large baking sheet, combine cherry tomatoes, sliced onion, and garlic. Drizzle with olive oil, sprinkle with oregano, salt, and pepper. Toss to coat.
- Roast for Flavor: Roast for 25-35 minutes, until tomatoes are burst, softened, and slightly caramelized.
- Blend to Desired Consistency: Carefully transfer roasted mixture to a blender or deep pot. Add vinegar. Blend until desired consistency (chunky or smooth).
- Finish & Season: Pour sauce into a saucepan. Stir in fresh basil. Taste and adjust salt, pepper, or vinegar as needed. Simmer gently for 5-10 minutes. Serve hot over pasta.
