This simple yet incredibly flavorful cherry tomato spaghetti sauce comes together in under 30 minutes, making it perfect for a delicious weeknight meal. Bursting with fresh, sweet flavors, it’s a family favorite you’ll make again and again.
Ingredients
- 1½ lbs cherry or grape tomatoes, halved (or left whole if small)
- 4–5 cloves garlic, minced
- ¼ cup extra virgin olive oil
- ½ tsp red pepper flakes (optional, adjust to taste)
- ½ cup fresh basil leaves, roughly chopped
- Salt and freshly ground black pepper, to taste
- 1 lb spaghetti or pasta of choice
- Optional: Parmesan cheese for serving
Instructions
- 1. Prep Tomatoes & Garlic: Wash and halve larger cherry tomatoes. Finely mince the garlic.
- 2. Sauté Aromatics: In a large skillet or Dutch oven, heat olive oil over medium heat. Add minced garlic and red pepper flakes (if using). Sauté for 1 minute until fragrant, being careful not to burn the garlic.
- 3. Simmer Tomatoes: Add the cherry tomatoes to the pan along with a generous pinch of salt and pepper. Cover and cook for 8-10 minutes, stirring occasionally, until the tomatoes soften and burst, releasing their juices.
- 4. Crush & Season: Remove the lid. Use the back of a spoon or a potato masher to gently crush any remaining whole tomatoes, creating your chunky sauce. Cook uncovered for another 5-7 minutes to thicken slightly.
- 5. Finish: Stir in the fresh basil. Taste and adjust seasonings (salt and pepper) as needed.
- 6. Serve: Toss with freshly cooked spaghetti or your favorite pasta. Serve immediately, garnished with fresh basil and Parmesan cheese, if desired.
