Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes
- 4–5 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 cup fresh basil leaves, torn
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, freshly ground, or to taste
- 1 lb spaghetti or your favorite pasta
- Optional: Red pepper flakes for heat, Parmesan cheese for serving
Instructions
- 1. Prep Tomatoes & Garlic: Rinse cherry tomatoes. Mince garlic.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and cook for 1-2 minutes until fragrant and lightly golden.
- 3. Simmer Tomatoes: Add cherry tomatoes to the skillet. Increase heat to medium-high. Stir and cook for 15-20 minutes, gently smashing some tomatoes, until they burst and the sauce thickens. Season with salt and pepper.
- 4. Finish & Serve: Remove from heat. Stir in torn fresh basil. Taste and adjust seasoning. Toss with freshly cooked spaghetti and serve immediately, topped with Parmesan if desired.
