  • 1 pint (about 2 cups) cherry or grape tomatoes, halved or quartered if large
  • 3 cloves garlic, minced
  • 23 tablespoons extra virgin olive oil
  • 1/4 teaspoon red pepper flakes (optional, adjust to taste)
  • 1/4 cup fresh basil leaves, roughly torn or chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • (Optional) 1/4 teaspoon sugar, to balance acidity
  • (Optional) 1 tablespoon butter, for added richness

Instructions

  • 1. Prep the Ingredients: Halve or quarter larger cherry tomatoes. Mince the garlic. Have fresh basil ready to add at the end.
  • 2. Sauté Aromatics: Heat olive oil in a wide skillet over medium heat. Add minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant and lightly golden, being careful not to burn.
  • 3. Add Tomatoes and Simmer: Add tomatoes to the pan with a good pinch of salt and pepper. Stir to coat. Increase heat slightly, bring to a gentle simmer, then cover and cook for 8-10 minutes until tomatoes soften and burst.
  • 4. Bursting & Mashing Tomatoes: Uncover and use the back of a spoon to gently mash any unburst tomatoes. Continue to simmer uncovered for another 5-7 minutes, allowing the sauce to thicken slightly.
  • 5. Finishing Touches: Remove from heat. Stir in fresh basil. Taste and adjust seasoning with more salt, pepper, or a tiny pinch of sugar if needed. Stir in optional butter for richness. Serve immediately with your favorite pasta.
