Ingredients
- 2–3 lbs cherry or grape tomatoes
- 1/4 cup extra virgin olive oil, divided
- 1 medium yellow onion, diced
- 4–6 cloves garlic, minced
- 1 tsp dried oregano
- 1/4 cup fresh basil leaves, chopped
- 1 tsp sea salt (or to taste)
- 1/2 tsp black pepper (or to taste)
- Optional: 1/2 tsp red pepper flakes, balsamic glaze for serving
Instructions
- 1. Prep Ingredients: Preheat oven to 400°F (200°C). Dice onion and mince garlic.
- 2. Roast Tomatoes: Toss cherry tomatoes with 2 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp pepper on a baking sheet. Roast for 20-25 minutes until blistered.
- 3. Sauté Aromatics: While tomatoes roast, heat remaining 2 tbsp olive oil in a large pot over medium heat. Sauté onion for 5-7 mins until translucent. Add garlic (and red pepper flakes, if using) and cook for 1 minute until fragrant.
- 4. Simmer Sauce: Add roasted tomatoes and dried oregano to the pot. Bring to a gentle simmer, then reduce heat, cover, and cook for 15-20 minutes, allowing flavors to meld. Mash tomatoes gently for desired consistency.
- 5. Finish & Serve: Remove from heat. Stir in fresh basil. Taste and adjust seasoning. Serve hot over pasta and optionally drizzle with balsamic glaze.
