Description

This vibrant cherry tomato spaghetti sauce is bursting with sweet and tangy flavors. It’s incredibly easy to make and transforms simple ingredients into a gourmet weeknight meal.


Ingredients

  • 2 lbs (about 900g) cherry or grape tomatoes
  • 46 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1/21 tsp red pepper flakes (optional, to taste)
  • 1/2 cup fresh basil leaves, torn or chopped
  • Salt and freshly ground black pepper, to taste

Instructions

  • Prep Tomatoes & Garlic: Wash tomatoes and mince garlic.
  • Sauté Aromatics: Heat olive oil in a large skillet. Sauté garlic and red pepper flakes for 1-2 minutes until fragrant.
  • Simmer Tomatoes: Add tomatoes to the pan, season with salt and pepper. Cover and simmer for 15-20 minutes until tomatoes burst.
  • Mash & Thicken: Remove lid. Mash tomatoes with a spoon or masher. Simmer uncovered for 5-10 minutes to thicken.
  • Finish with Basil: Remove from heat, stir in fresh basil. Taste and adjust seasoning.
