Description
This easy-to-make cherry tomato spaghetti sauce bursts with fresh, sweet tomato flavor and fragrant basil. Perfect for a quick weeknight meal, ready in under 30 minutes.
Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes
- 3 cloves garlic, minced
- 3 tbsp extra virgin olive oil
- 1/2 tsp red pepper flakes (optional, for heat)
- 1/2 cup fresh basil leaves, roughly torn or chopped
- Salt, to taste
- Freshly ground black pepper, to taste
- Parmesan cheese, for serving (optional)
Instructions
- Sauté Aromatics: In a large skillet or pot, heat olive oil over medium heat. Add minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
- Simmer Tomatoes: Add cherry tomatoes to the skillet. Increase heat to medium-high and cook for 8-10 minutes, stirring occasionally and gently smashing some tomatoes. They will soften and burst, releasing their juices.
- Finish & Season: Remove from heat. Stir in fresh basil, salt, and pepper. Taste and adjust seasonings as needed. Serve immediately over your favorite pasta, topped with Parmesan cheese if desired.
