Ingredients
- 2 lbs cherry or grape tomatoes, halved
- 2 tbsp extra virgin olive oil
- 1 small yellow onion, finely diced
- 4–6 cloves garlic, minced
- 1 tsp dried oregano
- 1/4 tsp red pepper flakes (optional)
- 1/4 cup dry red wine OR 1 tsp balsamic vinegar
- 1/2 cup fresh basil leaves, roughly chopped
- Kosher salt and freshly ground black pepper, to taste
Instructions
- Step 1: Prep Ingredients. Halve cherry tomatoes, dice onion, and mince garlic.
- Step 2: Sauté Aromatics. Heat olive oil in a large saucepan over medium heat. Add onion and cook until translucent (5-7 mins). Stir in garlic, oregano, and red pepper flakes; cook for 1 minute until fragrant.
- Step 3: Simmer Tomatoes. Add halved tomatoes and a pinch of salt to the pot. Stir in wine or balsamic vinegar. Bring to a gentle simmer, then reduce heat, cover, and cook for 20-25 minutes until tomatoes burst and soften.
- Step 4: Mash and Finish. Uncover and gently mash some of the tomatoes for a chunky texture. Season with salt and pepper to taste. Stir in fresh basil just before serving.
