Ingredients
- 2 pints (about 4 cups) cherry tomatoes, stemmed
- 6–8 cloves garlic, unpeeled
- ¼ cup extra virgin olive oil, plus more for drizzling
- ½ teaspoon red pepper flakes (or to taste)
- 1 pound spaghetti or your preferred pasta
- ½ cup fresh basil leaves, torn or chopped
- Salt and freshly ground black pepper to taste
- ¾ – 1 cup pasta cooking water, reserved
Instructions
- Preheat oven to 400°F (200°C). Place cherry tomatoes and unpeeled garlic cloves on a baking sheet. Drizzle with 2 tablespoons olive oil, season with salt and pepper, and toss.
- Roast for 20-25 minutes, or until tomatoes are bursting and garlic is soft and golden. Remove from oven, peel the roasted garlic.
- Meanwhile, bring a large pot of salted water to a boil for pasta. In a large skillet, heat 2 tablespoons olive oil over medium heat. Add red pepper flakes and cook for 30 seconds until fragrant.
- Add roasted tomatoes (with juices) and peeled garlic to the skillet. Gently crush tomatoes and garlic with a spoon. Add ½ cup reserved pasta water and simmer for 5-7 minutes.
- Cook spaghetti according to package directions. Drain, reserving 1 cup pasta water. Add cooked spaghetti to the sauce. Toss with fresh basil. Add more pasta water as needed for desired consistency. Season with salt and pepper to taste. Serve immediately.
