Ingredients

  • 1 pint (about 2 cups) cherry tomatoes, washed
  • 3 tablespoons extra virgin olive oil
  • 4 cloves garlic, minced
  • ½ cup fresh basil leaves, roughly chopped
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon freshly ground black pepper, or to taste
  • Optional: ¼ teaspoon red pepper flakes
  • Optional: 2 tablespoons dry white wine or vegetable broth

Instructions

  • Heat olive oil in a large skillet over medium-low heat. Add minced garlic and sauté for 1-2 minutes until aromatic, being careful not to burn.
  • Increase heat to medium, add cherry tomatoes to the pan. Cook for 8-12 minutes, stirring occasionally, until tomatoes soften and burst. Gently mash some with the back of a spoon.
  • Reduce heat to low, simmer for 5-7 minutes, allowing flavors to meld. Season with salt, pepper, and red pepper flakes (if using).
  • Remove from heat and stir in the fresh chopped basil. Taste and adjust seasoning as needed.
