This easy recipe delivers a fresh, bursting tomato sauce that’s light yet incredibly flavorful. Perfect for a quick weeknight meal, it highlights the natural sweetness of cherry tomatoes.
Ingredients
- 1 pint (about 2 cups) cherry tomatoes, washed
- 3 tablespoons extra virgin olive oil
- 4 cloves garlic, minced
- ½ cup fresh basil leaves, roughly chopped
- ½ teaspoon salt, or to taste
- ¼ teaspoon freshly ground black pepper, or to taste
- Optional: ¼ teaspoon red pepper flakes
- Optional: 2 tablespoons dry white wine or vegetable broth
Instructions
- Heat olive oil in a large skillet over medium-low heat. Add minced garlic and sauté for 1-2 minutes until aromatic, being careful not to burn.
- Increase heat to medium, add cherry tomatoes to the pan. Cook for 8-12 minutes, stirring occasionally, until tomatoes soften and burst. Gently mash some with the back of a spoon.
- Reduce heat to low, simmer for 5-7 minutes, allowing flavors to meld. Season with salt, pepper, and red pepper flakes (if using).
- Remove from heat and stir in the fresh chopped basil. Taste and adjust seasoning as needed.
- Serve immediately over your favorite pasta.
