Cherry Tomato Spaghetti Sauce

  • Total Time: 30 minutes
  • Yield: 4 servings

Description

Unlock the vibrant flavors of fresh cherry tomatoes in this incredibly easy and delicious spaghetti sauce. Perfect for a quick weeknight dinner, this recipe celebrates simplicity and produces maximum flavor.

Ingredients

  • lbs fresh cherry or grape tomatoes, halved
  • 34 cloves garlic, thinly sliced or minced
  • ¼ cup extra virgin olive oil
  • ½ teaspoon red pepper flakes (or to taste)
  • ½ cup fresh basil leaves, torn or roughly chopped
  • Salt and freshly ground black pepper, to taste
  • Optional: pinch of granulated sugar (if tomatoes are tart)
  • Optional: 1-2 tbsp dry white wine

Instructions

  • In a large skillet or wide pot, heat the olive oil over medium-low heat. Add the sliced garlic and red pepper flakes and cook gently for 1-2 minutes until fragrant, being careful not to burn the garlic.
  • Increase heat to medium-high. Add the halved cherry tomatoes to the skillet, stirring occasionally. Cook for 8-10 minutes, allowing the tomatoes to blister and burst, releasing their juices. Gently mash some of the tomatoes with the back of your spoon.
  • If using, add the optional white wine and let it reduce for 1 minute. Reduce heat to medium-low and simmer the sauce for another 5-7 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  • Remove from heat. Stir in the fresh basil. Season generously with salt and black pepper, tasting and adjusting as needed. If the sauce is too tart, add a small pinch of sugar.
  • Toss immediately with your favorite cooked pasta, along with a splash of reserved pasta water if desired, and serve with fresh Parmesan cheese.
