Ingredients
- 1½ lbs fresh cherry or grape tomatoes, halved
- 3–4 cloves garlic, thinly sliced or minced
- ¼ cup extra virgin olive oil
- ½ teaspoon red pepper flakes (or to taste)
- ½ cup fresh basil leaves, torn or roughly chopped
- Salt and freshly ground black pepper, to taste
- Optional: pinch of granulated sugar (if tomatoes are tart)
- Optional: 1-2 tbsp dry white wine
Instructions
- In a large skillet or wide pot, heat the olive oil over medium-low heat. Add the sliced garlic and red pepper flakes and cook gently for 1-2 minutes until fragrant, being careful not to burn the garlic.
- Increase heat to medium-high. Add the halved cherry tomatoes to the skillet, stirring occasionally. Cook for 8-10 minutes, allowing the tomatoes to blister and burst, releasing their juices. Gently mash some of the tomatoes with the back of your spoon.
- If using, add the optional white wine and let it reduce for 1 minute. Reduce heat to medium-low and simmer the sauce for another 5-7 minutes, allowing the flavors to meld and the sauce to thicken slightly.
- Remove from heat. Stir in the fresh basil. Season generously with salt and black pepper, tasting and adjusting as needed. If the sauce is too tart, add a small pinch of sugar.
- Toss immediately with your favorite cooked pasta, along with a splash of reserved pasta water if desired, and serve with fresh Parmesan cheese.
