Ingredients

  • 1.5 lbs (about 680g) cherry or grape tomatoes, halved
  • 3 tbsp extra virgin olive oil
  • 45 cloves garlic, thinly sliced or minced
  • 1/2 tsp red pepper flakes (optional, adjust to taste)
  • 1/2 cup fresh basil, torn
  • Salt and freshly ground black pepper to taste
  • 12 oz (340g) spaghetti or your favorite pasta
  • Freshly grated Parmesan cheese, for serving

Instructions

  • Cook pasta according to package directions until al dente. Reserve 1/2 cup pasta water, then drain.
  • While pasta cooks, heat olive oil in a large skillet over medium heat.
  • Add garlic and red pepper flakes (if using); sauté for 1-2 minutes until fragrant.
  • Add halved cherry tomatoes, salt, and pepper. Increase heat to medium-high and cook for 10-15 minutes, stirring occasionally, until tomatoes burst and form a sauce. Mash gently with a spoon.
  • Stir in half of the fresh basil. Taste and adjust seasoning.
  • Add drained pasta to the skillet with the sauce. Toss well, adding reserved pasta water as needed to create a glossy sauce.
  • Stir in remaining fresh basil. Serve immediately with Parmesan cheese.
