Ingredients
- 1.5 lbs (about 680g) cherry or grape tomatoes, halved
- 3 tbsp extra virgin olive oil
- 4–5 cloves garlic, thinly sliced or minced
- 1/2 tsp red pepper flakes (optional, adjust to taste)
- 1/2 cup fresh basil, torn
- Salt and freshly ground black pepper to taste
- 12 oz (340g) spaghetti or your favorite pasta
- Freshly grated Parmesan cheese, for serving
Instructions
- Cook pasta according to package directions until al dente. Reserve 1/2 cup pasta water, then drain.
- While pasta cooks, heat olive oil in a large skillet over medium heat.
- Add garlic and red pepper flakes (if using); sauté for 1-2 minutes until fragrant.
- Add halved cherry tomatoes, salt, and pepper. Increase heat to medium-high and cook for 10-15 minutes, stirring occasionally, until tomatoes burst and form a sauce. Mash gently with a spoon.
- Stir in half of the fresh basil. Taste and adjust seasoning.
- Add drained pasta to the skillet with the sauce. Toss well, adding reserved pasta water as needed to create a glossy sauce.
- Stir in remaining fresh basil. Serve immediately with Parmesan cheese.
