Ingredients
- 1.5 lbs cherry or grape tomatoes
- 3 tbsp extra virgin olive oil
- 1 medium onion, finely chopped
- 4–5 cloves garlic, minced
- 1/4 cup water or vegetable broth
- 1/2 cup fresh basil, chopped
- 2 tbsp fresh oregano, chopped
- Salt and freshly ground black pepper to taste
- Optional: 1/2 tsp red pepper flakes
- Optional: Pinch of sugar (if tomatoes are tart)
- Cooked spaghetti or pasta of choice, for serving
- Freshly grated Parmesan cheese, for serving
Instructions
- 1. Prep Tomatoes & Aromatics: Wash cherry tomatoes. Finely mince garlic and chop onion. Roughly chop fresh herbs, setting aside for later.
- 2. Sauté Foundation: Heat olive oil in a large skillet over medium heat. Add onion and cook until softened (5-7 mins). Add garlic (and red pepper flakes, if using) and cook for 1 minute until fragrant.
- 3. Simmer for Flavor: Add cherry tomatoes and water/broth to the skillet. Bring to a gentle simmer, then cover and cook on low for 15-20 minutes, stirring occasionally and gently pressing on tomatoes, until most have burst.
- 4. Adjust Texture: Mash some tomatoes with a potato masher for a chunkier sauce, or use an immersion blender for a smoother sauce. Taste and add a pinch of sugar if tomatoes are tart.
- 5. Finish & Season: Remove from heat. Stir in fresh basil and oregano. Season generously with salt and fresh black pepper. Taste and adjust seasonings as needed. Serve immediately with pasta and Parmesan cheese.
