Ingredients
- 1.5 lbs (approx. 680g) cherry or grape tomatoes
- 3–4 tbsp extra virgin olive oil
- 1 medium onion, finely chopped
- 3–4 cloves garlic, minced
- 1/4 tsp dried oregano (optional, if not using fresh)
- 1/2 cup fresh basil, roughly torn or chopped
- Salt to taste
- Freshly cracked black pepper to taste
- Pinch of sugar (optional, for balancing acidity)
- Cooked spaghetti or your favorite pasta, for serving
- Freshly grated Parmesan or Pecorino Romano cheese, for serving
Instructions
- 1. Prep Ingredients: Wash tomatoes. Chop onion and mince garlic.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add onion and cook until translucent (5-7 min). Add garlic and dried oregano (if using) and cook for 1 minute until fragrant.
- 3. Cook Tomatoes: Add cherry tomatoes to the pan. Increase heat to medium-high and cook, stirring occasionally, until tomatoes soften and begin to burst (10-15 min). Gently mash some tomatoes with a spoon.
- 4. Simmer: Reduce heat to low, cover, and simmer for 15-20 minutes, allowing flavors to meld and sauce to thicken.
- 5. Finish & Serve: Remove from heat. Stir in fresh basil. Season generously with salt, pepper, and an optional pinch of sugar. Toss with cooked pasta and serve immediately with grated cheese.
