Ingredients

  • 1.52 lbs fresh cherry or grape tomatoes
  • 34 tbsp extra virgin olive oil
  • 46 cloves garlic, minced
  • 1/2 cup fresh basil leaves, chopped
  • 12 tbsp fresh oregano, chopped (or 1 tsp dried)
  • Salt and freshly ground black pepper, to taste
  • Optional: 1/4 – 1/2 tsp red pepper flakes
  • Optional: 1/4 cup dry white wine
  • Optional: 1 tsp balsamic vinegar

Instructions

  • 1. Prep Ingredients: Wash and halve or score cherry tomatoes. Mince garlic. Chop fresh basil and oregano.
  • 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant; do not burn.
  • 3. Cook Tomatoes: Add cherry tomatoes to the skillet. Increase heat to medium-high. Cook for 8-10 minutes, stirring occasionally, until tomatoes burst and release juices. Gently mash some tomatoes with a spoon.
  • 4. Simmer for Depth: Reduce heat to medium-low. Add white wine (if using) and simmer for 1 minute. Continue to simmer sauce for 5-7 minutes to meld flavors and slightly thicken. Season with salt and pepper to taste.
  • 5. Finish & Serve: Remove from heat. Stir in fresh basil, oregano, and balsamic vinegar (if using). Toss with cooked pasta and serve immediately.
