Ingredients
- 2 lbs cherry tomatoes (or grape tomatoes)
- 6–8 cloves garlic, peeled
- 1/4 cup extra virgin olive oil
- 1 tsp dried oregano
- 1/2 – 1 tsp red pepper flakes (optional, to taste)
- 1 tsp sea salt (or to taste)
- 1/2 tsp black pepper (freshly ground)
- 1/2 cup fresh basil leaves, packed
Instructions
- Preheat oven to 400°F (200°C).
- Wash and pat dry cherry tomatoes. Place on a large baking sheet along with peeled garlic cloves.
- Drizzle with olive oil, sprinkle with oregano, red pepper flakes (if using), salt, and pepper. Toss to coat evenly.
- Roast for 25-35 minutes, until tomatoes are burst and caramelized, and garlic is golden.
- Carefully transfer roasted tomatoes, garlic, and all pan juices to a food processor or deep bowl. Add fresh basil.
- Pulse or blend to your desired consistency (chunky or smooth).
- Transfer sauce to a saucepan and simmer over medium-low heat for 10-15 minutes to meld flavors.
- Taste and adjust seasoning as needed. Serve hot with your favorite pasta.
