Ingredients

  • 2 lbs cherry tomatoes (or grape tomatoes)
  • 68 cloves garlic, peeled
  • 1/4 cup extra virgin olive oil
  • 1 tsp dried oregano
  • 1/21 tsp red pepper flakes (optional, to taste)
  • 1 tsp sea salt (or to taste)
  • 1/2 tsp black pepper (freshly ground)
  • 1/2 cup fresh basil leaves, packed

Instructions

  • Preheat oven to 400°F (200°C).
  • Wash and pat dry cherry tomatoes. Place on a large baking sheet along with peeled garlic cloves.
  • Drizzle with olive oil, sprinkle with oregano, red pepper flakes (if using), salt, and pepper. Toss to coat evenly.
  • Roast for 25-35 minutes, until tomatoes are burst and caramelized, and garlic is golden.
  • Carefully transfer roasted tomatoes, garlic, and all pan juices to a food processor or deep bowl. Add fresh basil.
  • Pulse or blend to your desired consistency (chunky or smooth).
  • Transfer sauce to a saucepan and simmer over medium-low heat for 10-15 minutes to meld flavors.
  • Taste and adjust seasoning as needed. Serve hot with your favorite pasta.
